Aioli
Ingredients
4 large garlic cloves
Pinch of sea salt
2 large egg yolks
300 mil virgin olive oil
1 to 2 ttbsp lemon juice to taste
1 tbsp fresh breadcrumbs
Ground black peppper
To serve optional
A selection of fresh raw vegetables sliced
Method
1 finely chop the garlic add the salt and work into a smooth paste
2 put the paste into a food processor add the egg yolks and blend the mix with the mixer running slowly pour in the oil until a thick mayonaise forms
3 add 1 tbsp of lemon juice and the breadcrumbs then process again add more juice if required season to taste
