Almond- Stuffed Nectarines
Ingredients
6 firm nectarines
115 gr grond almonds
30 gr caster sugar
1 beaten egg
2 tbsp lemon juice
4 tbsp brown sugar
3 tbsp amaretto or cointreau
Method
1 half and remove the stones from the nectarines then put in a bowl and pour boiling water over them and leave for about 15 seconds drain and peel of the skin
2 mix the almonds caster sugar and egg then put a spoonful into the hollow on each of the nectarines. mix the lemon juice and brown sugar and the liqueur
3 put 2 nectarine halves on a piece of foil better if you use a double thickness then spoon a little of the liqueur syrup around the fruit and wrap in the foil, repeat until all the fruit is ready then cook on the barbecue for about 10 ninutes allow to cool a bit before serving
