Baked bananas
Ingredients
4 bananas
2 passion fruit
4 tbsp orange juice
4 tbsp orange flavoured liquer
Orange flavoured cream
150 ml double cream
3 tbsp icing sugar
2 tbsp orange flavoured liquer
Method
1 to make the orange flavoured cream pour the double cream into a mixing bowl sprinkle the icing sugar over the top and whisk the mixture until it stands in soft peaks then carefully fold in the liquer and chill.
2 peel the bananas and place each one on a sheet of kitchen foil cut the passion fruit in half and squeeze the juice over each of the bananas then spoon the orange juice and liquer over them.
3 fold the kitchen foil over to make a parcel then place on the barbecue for about 10 minutes until they are tender test by using a wooden skewer. Then put onto plates a open the parcel and serve with the orange flavoured cream.
Variation
Leave the bananas in their skins for a quick dessert just split the skins and pop in a couple of cubes of chocolate then wrap and barbecue for 10 minutes till the chocolate begins to melt. Or you can just bake the bananas in their skins until soft and then serve with double cream or ice cream.
