Buttery corn-on-the-cob
Ingredients
4 sweetcorn cobs with the husks
100 gr butter
1 tbsp chopped parsley
1 tsp chopped chives
1 tsp chopped thyme
Grated rind of 1 lemon
Salt and pepper
Method
1 to prepare the cobs peel back the husks to the base and remove the silky hairs. then fold back the husks fasten them with string if necessary. Then blanch the cobs in a saucepan of boiling water for about 5 minutes then remove and drain and dry the cobs.
2 barbecue the cobs for about 20 to 30 minutes turning to ensure even cooking
3 soften the butter and beat in the parsley, chives, thyme and lemon rind add salt and pepper to taste
4 put the cobs onto plates pull back the husks and serve with the butter
