Chilli glazed prawn skewers

Ingredients

1 garlic clove chopped
1 red bird-eye chilli, deseeded and chopped
1 tbsp tamarind paste
1 tbsp sesame oil
1 tbsp dark soy sauce
2 tbsp lime juice
1 tbsp soft light brown sugar
16 large raw whole tiger prawns

To serve
Crusty bread
Lime wedges
Salad leaves

Method

1 put the chilli, garlic, tamarind, sesame oil, soy sauce, lime juice and sugar in to a small pan stir the contents over a low heat until the sugar has dissolved remove from heat and allow to cool completely
2 wash and dry the prawns put them into a large dish in a single layer then spread the marinade over the prawns turn them over to make sure they are all coated evenly then cover the dish and leave to marinade for at least 2 hours better if left overnight
3 soak 4 bamboo or wooden skewers in cold water fo 30 minutes. Drain and thread 4 prawns on to each of the skewers then barbecue them for 5 to 6 minutes turning them over until they turn pink and begin to brown.
4 thread a wedge of lime on to the end of each skewer serve with the crusty bread and salad
