Chilli Scallop and Prawn Kebabs
Ingredients
1 clove of garlic crushed
1 tbsp fresh grated ginger
2 tsp sesame oil
1 tbsp chilli bean sauce (can be hot use sparingly)
1 tbsp soy sauce
2 tsp tomato paste
1 tbsp sugar
1 tbsp lemon juice
1 kg large prawns
250 gr scallops
Method
1 mix the garlic ginger, sesame oil chilli bean sauce, tomato paste, soy sauce, sugar and lemon juice in a large dish
2 peel and devein the prawns leaving the tails on clean the scallops and put them into the marinade and leave for about 15 minutes
3 thread the prawns and scallops onto the skewers and grill for about 8 minutes turning to ensure even cooking and keep basteing with the marinade
