Garlic potato wedges
Ingredients
3 large baking potatoes scrubbed
4 tbsp olive oil
2 tbsp butter
2 garlic cloves chopped
1 tbsp chopped rosemary
1tbsp chopped parsley
1tbsp chopped thyme
Salt and pepper
Method
1 boil a large pan of water then add the potatoes and parboil them for 10 minutes drain them and then run them under some cold water drain again. Now transfer to a chopping board and cut into thick wedges but do not peel them.
2 heat the oil butter and garlic in a small pan until the garlic starts to brown then remove from the heat stir in the herbs season to taste with the salt and pepper.
3 brush the mixture generously over the potato wedges then barbecue the potatoes for 10 to 15 minutes brushing with any remaining oil until the potato wedges are just tender. Now serve as a starter or a side dish
