Greek Chicken Kebabs
Ingredients
4 large chicken breasts cut into small chunks
Herb marinade
5 tbsp oilive oil
grated rind and juice of 1 lemon
2cloves of crushed garlic
1 tsp dried thyme
1 tsp cayenne pepper
2 small onions
2 small lemons
salt and pepper
Method
1 Mix the marinade ingredients in a large bowl then add the chicken pieces make sure they are well coated and leave for about 2 hours
2 cut each onion and lemon into 8 pieces and put them onto skewers alternating with the chicken
3 cook the kebabs for about 10 mins turning and brushing with the marinade to keep them moist
