Indian charred chicken

Ingredients

4 chicken breats skinned and boned
2tbsp curry paste
1tbsp of sunflower oil
1 tbsp light brown sugar
1 tsp ground ginger
½ tsp ground cumin

To serve

Naan bread
Green salad leaves

Cucumber raita
¼ cucumber
150 ml low fat natural yogurt
¼ tsp chilli powder

Method

1 put the chicken breasts between 2 sheets of cling film and pound them with a mallet or rolling pin to flatten them
2 mix together the curry paste oil sugar ginger and cumin in a small bowl then spread the mixture on both sides of the chicken and leave until needed.
3 make the raita peel the cucumber and scoop out the seeds then grate the cucumber flesh sprinkle with salt place in a sieve and leave to stand for 10 minutes. Rinse of the salt and squeeze any remaining moisture
4 in a small bowl mix the grated cucumber with the yogurt and stir in the chilli powder then leave to chill until needed.
