Indian Kofta

Ingredients

1 smallonion
450g/1lb ground lamb
2 tbsp curry paste
2 tbsp natural yogurt
oil, to baste

Tomato Sambal
3 tomatoes deseeded and diced
pinch of ground coriander
pinch of ground cumin
2 tbsp fresh coriander
salt and pepper

to serve
poppadoms
chutney

Method

1 put the onion in a food processor and chop finely. add the lamb and procees again
2 add the curry paste and yogurt and mix well divide the mix into8 equal portions. shape the mixture into 8 sausages and push each of them onto a skewer then chillin the fridge.
3 make the tomato sambal by mixing together the tomatoes, spices, chopped coriander and salt and pepper to taste in a bowl and leave to stand for about 30 minutes for the flavours to combine.
4 barbecue the kebabs for 10 to 15 minutes turning them often and baste with the oil if needed. Then put onto serving plates and serve with the chutney and tomato sambal and poppadoms
