Lemon Chicken Skewers

Ingredients

2 long or 4 short lemon grass stalks
2 large chicken breasts skinned and boned
1 small egg white
1 carrot finely grated
1 small red chilli chopped and deseeded
2 tbsp chopped fresh garlic chives
2 tbsp chopped fresh coriander
1 tbsp sunflower oil
salt and pepper
coriander and lime slices to garnish

Method

1 if using long lemon stalks cut them in half to make 4 short ones then cut each of them down the middle lengthways so you now have 8 sticks.
2 roughly chop the chicken and put into a food processor whit the egg white and mix to a smooth paste, then add the carrot, chilli, chives, coriander and salt and pepper mix together well. Then chill in the fridge for about 30 min.
4 divede into 8 equal portions then wrap them around the lemon grass skewers. Brush with oil and barbecue for 5 to 6 minutes until golden brown and cooked well.
5 serve while hot and garnish with the lemon slices an coriander
