Lemon Chicken skewers

Ingredients

4 chicken breasts skinned and boned
1 tsp ground coriander
2 tsp lemon juice
300ml natural yogurt
1 lemon
3 tbsp chopped coriander
oil for brushing
salt and pepper

to serve
lemon wedges
salad leaves

Method

1 cut the chicken into small pieces and put into a dish. Add the ground coriander, lemon juice and salt and pepper to taste, add 4 tbsp of the yogurt and mix well then cover and leave to chill overnight if possible.
2 to make the lemon yogurt peel and finely chop the lemon discard all the pip then stir the lemon into the yogurt with the chopped coriander and chill.
3 put the chicken onto skewers brush wiyh the oil and barbecue for about15 minutes turningto ensure even cooking. put kebabs onto a serving plate garnish with the salad leaves and serve with the lemon yogurt
