Lemon herrings
Ingredients
4 herrings gutted and scaled
4 bay leaves
Salt
1 lemon sliced
4tbsp butter
3 tbsp fresh chopped parsley
½ tp lemon pepper
Fresh crusty bread
Method
1 season the herrings inside and out with the salt to taste
And place a bay leave inside each fish
2 place 4 squares of foil on work surface divide lemon slices between them and place fish on top of the lemon beat the butter until soft mix the parsley and lemon pepper in and then dot the fish liberally all over.
3 wrap the fish tightly and barbecue for 15 to 20 mins until the fish is cooked unwrap the parcels just before serving and use the crusty bread to mop up the delicious sauce
