Lemon Monkfish Skewers

Ingredients

450g monkfish
2 courgettes
1 lemon
12 cheryy tomatoes
8 bay leaves

SAUCE
3 tbsp lemon juices
1 tbsp chopped fresh tyme
½ tsp lemon peppers
salt

Method

1 Cut the monkfish into 5cm chunks
2 Cut the courgettes into thick slices and the lemon into wedges
3 Thread the monkfish courgettes lemon tomatoes and bay leaves onto 4 skewers
4 Make the basting sauce, mix the oil, lemon juice, lemon pepper and salt in a small ball then brush the basting sauce over the skewers
5 Cook the skewers on the barbecue for about 15 mins over medium hot coals basting often with the sauce until the fish is cooked through serve with salad leaves and crusty bread
