Mackerel with Apple sauce
Ingredients
4 mackerel cleaned
salt
1 lemon juiced
1 tbsp chopped parsley
1 tbsp chopped thyme
1/4 tsp dry bay leaves
3 tbsp olive oil
Apple butter
1 large cooking apple
2 tbsp butter
grated rind and juice of 1/2 lemon
1 tbsp grated onion
Method
1 wash and core the apple and chop it roughly
2 put into pan with the butter lemon rind and juice and the onion and cook over a gentle heat until the apple is soft then blend until smooth
3 prepare the mackerel by cutting several deep cuts on both sides of the fish (this stops the skin bursting) sprinkle with the lemon juice and divide the herbs between the fish and put into the cavity then brush with the oil
4 put onto fish holders if you have them and cook for about 0 minutes turning and brushing with the oil anf lemon juice and serve with the apple butter
