Maple Chicken
Ingredients
12 boned chicken thighs
5 tbsp maple syrup
1 tbsp caster sugar
grated rind and juice of half an orange
2 tbsp tomato ketchup
2 tsp worcesterhire sauce
Garnish
slices of orange
flat leaf parsley
To serve
focaccia bread
salad leaves
cherry tomatoes
Method
1 use a sharp knive to make 3 cuts in the chiken flesh then put into a shallow dish
2 make the marinade by mixing together the maple syrup, sugar,orange rind and juice, ketchup and worcestershire sauce in a small bowl. Now pour the marinade over the chicken tossing the chicken to make sure it is coated well then chill until needed.
3 romeve from the marinade and cook on the barbecue for about 20 minutes turning and basting often.
4 put onto serving plates garnish and serve with the focaccia braed tomatoea and salad
