Mediterranean Sardines

Ingredients

8 to 12 fresh sardines
8 to 12 sprigs of fresh thyme
3 tbsp lemon juice 4tbsp olive oil
Salt and pepper

Garnish

Lemon wedges
Tomato slices
Fresh herbs

Method

1 clean and descale the fish if not done by fishmonger
Then wash and par dry with kitchen towel
2 tuck sprig of fresh thyme into each sardine
3 mix the lemon juice and oil put the sardines inyo a large dish season to taste and pour mixture over the fish put in the fridge and leave for 30 min
4 remove from the marinade put them in a basket if you have one or just barbecue on the rack for 3 to 4 min each side basting often
5 serve with with garnish of lemon wedges tomatos and fresh herbs
