Moroccan Lamb Koftas
Ingredients
55 gr burghul wheat
450 gr minced lamb
1 onion finely chopped
2 cloves of garlic crushed
1 tbsp chopped parsley
2 tbsp fresh mint chopped
2 tsp ground coriander
1 tsp cumun
1/2 tsp ground cinnamon
pinch of cayenne,cloves and nutmeg
2 tsp paprika
salt and pepper to taste
Yoghurt mint sauce
250 gr greek yoghurt
2 tbsp chopped mint
1 tbsp lemon juice
pinch of cayenne pepper
Method
1 mix the yoghurt mint and cayenne pepper and chill until needed
2 soak the wheat in hot water for 30 minutes then drain and squeeze out the excess water and put into a food processor
3 put the rest of the ingedients in the mixer and blend to a fine paste then divide into equal portions
4 roll the portions into sausage shapes and thread onto skewers and cook for about 10 minutes turning and brushing with oil
5 serve with the yoghurt mint sauce
