Pina colada pineapple

Ingredients

1 small pineapple
4 tbsp butter
2 tbsp muscovada sugar or any light brown sugar
50 gr fresh grated coconut
2tbsp coconut flavoured liquer or rum

Method

1 useing a very sharp knive cut the pineapple into quarters and remove the hard centre core leave the leaves attached. Now carefully cut the flesh away from the skin make cuts across the quarters, place the butter in a pan and heat gently until melted then brush the melted dutter over the pineapple and sprinkle with the sugar.
2 cover the leaves with kitchen foil to stop them burning and put on the barbecue for about 10 minutes
3 now sprinkle the coconut over the pineapple and barbecue for another 5 to 10 minutes cut side up until it is piping hot. Then transfer to plates and remove the foil pour the rum or liquer over and serve
