Prawn skewers with salsa

Ingredients

32 large tiger prawns
Olive oil for brushing
Aioli to serve

Marinade
125 mil of virgin olive oil
2tbsp lemon juice
1 tsp finely chopped red chilli
1tsp balsamic vinegar
Pepper

Tomato salsa
2 large sun ripened tomtos skinned and deseeded and chopped
4 spring onions chopped finely
1 red pepper skinned seeded and finely chopped
1 orange or yellow pepper skinned deseeded and finely chopped
1 tbsp virgin oil
2 tsp balsamic vinegar
4 sprigs of fresh basil

Method

1 makes the marinade place all the ingredients into a dish mix together and leave
2 prepare the prawns break off the heads peel of the shells leaving the tails use a small knife and make a slit along the back and remove the thin black vein put prawns into the marinade cover and chill
3 make the salsa put all ingredients except the basil into a dish mix together abd season
4 put 4 prawns on each of 8 metal skewers brush with the marinade brush grill rack with oil and cook for 1 min turn over brush again and cook for another min until prawns turn pink and opaque
5 serve with the salsa after mixing in the basil and serve with the aioli dip
