Roasted thai spiced peppers

Ingredients

2 red peppers
2 yellow peppers
2 green pepppers
2 red eye chillies deseeded and finely chopped
1 lemon grass stalk finely shredded
4tbsp lime juice
2tbsp palm sugar
1 tbsp thai fish sauce

Method

1 barbecue the peppers over hot coals turning them occasionally until the skins are charred. Then cool them slightly and remove the skins cut them in half and deseed and remove the core. Then slice them thickly and put into a large mixing bowl.
2 place the chillies lemon grass, lime juice, sugar and fish sauce into a jar and shake well until they are all well mixed. Then pour the dressing evenly over the peppers while they are still warm. Let them cool completely cover and chill for about an hour then put into a serveing dish and serve
