Smokey Fish Skewers

Ingredients

350 gr smoked cod fillet
350 gr cod fillet
8 large raw prawns
8 bay leaves

MARINADE

4tbsp sunflower oil
2tbsp lemon or lime juice
grated rind of lemon or lime
¼ tsp dried dill
salt and pepper

Method

1 Skin both types of cod and cut into bite sized pieces peel the prawns leaving just the tail
2 Make the marinade mix th oil lemon or lime juice and rind dill salt and pepper to taste in a small dish do not use a metal dish as it will affect the taste
3 Put the fish in the marinade and stir until fish is coated and leave for 1 to 4 hours
4 Spread the fish onto 4 skewers alternating the types of fish with the prawns and bay leaves
5 Cover the barbecue rack with foil and oil it then place the skewers on top of the foil
6 Barbecue the skewers for 5 to 10 mins basting with any marinade you have left
7 Turn them once and serve straight from the barbecue
