Suckling Pig
Ingredients
1 suckling pig
3/4l lemon juice
1/2l orange juice
1/4l olive oil
2 tsp of finely pressed garlic
150g coarse salt
2 tsp pepper
6 bay leaves
750g sausage meat
4 onions
2 bunches of mixed herbs
paprika powder
Method
1 wash and dry the pig. then mix the marinade using the lemon juice, orange juice, olive oil, garlic, salt and pepper and the bay leaves
2 rub the marinade all over the outside and the inside of the pig and leave for about 2 hours
3 in a bowl mix the sausage meat the onions and the herbs together. then spice with the paprika ,salt and pepper
4 stuff the mix into the pig stitch it up with string put the pig onto a spit and cover the legs and ears with foil and cook fo about 3 hours basting often when nearing the end of cooking time remove the foil to finish
