Thai style burgers

Ingredients

1 small lemon grss stalk
1 small red chilli deseeded
2 galic cloves peeled
2 spring onions
200 gr mushrooms
400 gr minced pork, beef, lamb
1tbsp thai fish sauce
3tbsp chopped fresh coriander
Sunflower oil
2 tbsp mayonnaise
1 tbsp lime juice
Salt and pepper
To serve
4 sesame burger buns
Shredded salad leaves

Method

1 put the lemon grass chilli, garlic and spring onions into a food processor and mix to a smooth paste then add the mushrooms and process until they are finely chopped
2 in a bowl mix the mushroom paste with the mince, fish sauce and coriander, season with the salt and pepper. Now divide the mixture into 4 equal portions and shape into flat burgers, then barbecue for 6 to 8 minutes turning to ensure even cooking. While they are cooking mix the mayo with the lime juice and then spread the mix onto the burger buns add a few leaves top with the burgers once cooked and serve while hot
